Ingredients

For the Meatballs

  • 1 lb ground beef (80/20 blend)
  • ½ cup finely grated Parmesan cheese
  • ¼ cup almond flour
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup mozzarella cheese, cut into small cubes

For the Kabobs

  • 1 whole bell pepper, cut into 1-inch pieces
  • 1 whole zucchini, sliced into 1/2-inch rounds
  • 1 whole red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Skewers (metal or soaked wooden)

Instructions

  • Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • In a large mixing bowl, combine the ground beef, Parmesan cheese, almond flour, egg, minced garlic, oregano, basil, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.
  • Take a small amount of the meat mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella cheese in the center, then fold the meat around the cheese and roll it into a ball. Repeat this process until all the meat mixture is used.
  • In a separate bowl, toss the bell pepper, zucchini, and red onion with olive oil, Italian seasoning, salt, and pepper until evenly coated.
  • Thread the meatballs onto the skewers, alternating with pieces of the seasoned vegetables. Aim for 2-3 meatballs per skewer, depending on size.
  • Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally, until the meatballs are browned and cooked through (internal temperature should reach 160°F or 71°C).
  • Once cooked, remove the kabobs from the grill and let them rest for a few minutes. Serve hot, drizzled with extra olive oil or a sprinkle of fresh herbs if desired.

Notes

Feel free to customize the vegetables based on your preference or what you have on hand. These kabobs are also great for meal prep and can be stored in the fridge for up to 3 days. Reheat in the oven or microwave before serving.
