Ingredients

  • 1 cup almonds roughly chopped (140g)
  • ½ cup sunflower seeds (70g)
  • ½ cup pumpkin seeds (64g)
  • ¼ cup chia seeds (40g)
  • ¼ cup flaxseeds (40g)
  • ½ cup unsweetened shredded coconut (40g)
  • ½ cup unsweetened mixed berries, freeze-dried (15g)
  • ¼ cup butter melted (60g)
  • ¼ cup almond butter (64g)
  • 2 tbsp erythritol (24g)
  • 1 tsp vanilla extract (5ml)
  • ½ tsp cinnamon
  • ¼ tsp salt

Instructions

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • In a large mixing bowl, combine the chopped almonds, sunflower seeds, pumpkin seeds, chia seeds, flaxseeds, and shredded coconut.
  • In a separate bowl, mix the melted butter, almond butter, erythritol, vanilla extract, cinnamon, and salt until well combined.
  • Pour the wet ingredients into the dry ingredients and mix thoroughly, ensuring all the dry ingredients are well coated.
  • Gently fold in the freeze-dried mixed berries into the mixture.
  • Transfer the mixture to the prepared baking pan and press down firmly into an even layer.
  • Bake in the preheated oven for 20 minutes, or until the edges are golden brown.
  • Remove from the oven and allow the granola bars to cool completely in the pan before cutting into 12 equal bars.
