Ingredients

For the Sliders

  • 1 lb ground beef (80/20 blend)
  • ½ tsp garlic powder (2g)
  • ½ tsp onion powder (2g)
  • ½ tsp smoked paprika (2g)
  • Salt and pepper to taste
  • 6 slices cheddar cheese (about 6 oz or 170g)

For the Low-Carb Buns

  • 1 cup almond flour (100g)
  • ¼ cup coconut flour (25g)
  • 1 tbsp baking powder (12g)
  • ½ tsp salt (3g)
  • 3 large eggs
  • ¼ cup unsweetened almond milk (60ml)
  • 2 tbsp melted butter (28g)

Toppings

  • 6 lettuce leaves (for wrapping)
  • 6 slices tomato
  • Pickles (optional)
  • Mustard and mayo (to taste)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well. Add the eggs, almond milk, and melted butter to the dry ingredients. Stir until a dough forms. Divide the dough into 6 equal portions and shape them into small buns. Place them on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from the oven and let cool slightly.
  • While the buns are baking, heat a skillet over medium-high heat. In a mixing bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined; do not overwork the meat. Form the mixture into 6 small patties. Once the skillet is hot, add the patties and cook for about 3-4 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, top each patty with a slice of cheddar cheese to melt.
  • Slice the low-carb buns in half. Place a lettuce leaf on the bottom half of each bun. Add a cheeseburger patty on top of the lettuce, followed by a slice of tomato and pickles if desired. Drizzle with mustard and mayo, then place the top half of the bun on each slider.

Notes
