Ingredients

Bacon

  • 4 slices bacon cooked and crumbled

Base Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • ¾ cup erythritol or preferred keto sweetener
  • 1 tsp pure vanilla extract
  • 1 tsp maple extract
  • ¼ tsp sea salt
  • ½ tsp xanthan gum optional, for thickening

Instructions

  • Start by cooking the bacon in a skillet over medium heat until crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease. Allow it to cool, then crumble it into small pieces and set aside.
  • In a large mixing bowl, combine the heavy cream, unsweetened almond milk, erythritol, vanilla extract, maple extract, and sea salt. Use a whisk to blend the ingredients until the erythritol is fully dissolved and the mixture is smooth.
  • If you prefer a thicker consistency, gradually sprinkle the xanthan gum into the mixture while whisking continuously to avoid clumps. This step is optional but can improve the creaminess of your ice cream.
  • Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes. Chilling the mixture helps develop the flavors and improves the texture of the ice cream.
  • Once chilled, pour the mixture into an ice cream maker. Churn according to the manufacturer's instructions until it reaches a soft-serve consistency, usually about 20-25 minutes.
  • During the last few minutes of churning, add the crumbled bacon to the ice cream maker. This will ensure even distribution of the bacon throughout the ice cream.
  • Transfer the churned ice cream into an airtight container. Press a piece of parchment paper against the surface to minimize air exposure, then seal the container. Freeze for at least 2 hours to firm up the ice cream.
  • Scoop the Keto Maple Bacon Ice Cream into bowls and enjoy! For an extra touch, drizzle a few drops of sugar-free maple syrup on top.

Notes

Feel free to adjust the sweetness to your liking by adding more or less erythritol. If you don't have an ice cream maker, you can freeze the mixture in a container and stir it every 30 minutes for the first 2-3 hours to break up ice crystals. Store any leftovers in the freezer for up to 2 weeks for optimal freshness.
