Ingredients

  • 1 lb cooked lobster meat, chopped
  • 4 slices bacon, chopped
  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • ¼ tsp garlic powder
  • Salt and pepper, to taste
  • ¼ cup green onions, finely chopped
  • 1 head romaine or butter lettuce, leaves separated

Instructions

  • In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Stir occasionally to ensure even cooking. Once done, use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess fat.
  • In a mixing bowl, combine the mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning to taste.
  • In a large bowl, add the chopped lobster meat and the crispy bacon. Pour the dressing over the mixture and gently fold until everything is well coated. Add the finely chopped green onions and mix again.
  • Take a lettuce leaf and spoon a generous amount of the lobster and bacon mixture into the center. Depending on the size of your leaves, you can either fold them over or leave them open-faced.
  • Arrange the filled lettuce cups on a serving platter. Optionally, garnish with additional green onions or a sprinkle of paprika for a pop of color. Serve immediately and enjoy!

Notes

Ensure the lobster meat is fully cooked before using. You can use fresh, frozen, or canned lobster meat. Feel free to substitute the bacon with turkey bacon for a lighter option. These cups can be prepared ahead of time; just assemble them right before serving to keep the lettuce crisp.
