Ingredients

  • 1 large head cauliflower approx. 2 pounds or 900 grams, cut into florets
  • 1 cup heavy cream 240 ml
  • 1 ½ cups sharp cheddar cheese shredded, 6 ounces or 170 grams
  • ½ cup cream cheese softened, 4 ounces or 112 grams
  • 6 slices bacon cooked and crumbled, 6 ounces or 170 grams
  • cup green onions chopped, 1.3 ounces or 38 grams
  • 1 tsp garlic powder 5 grams
  • ½ tsp onion powder 2.5 grams
  • ½ tsp paprika 2.5 grams
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with cooking spray or butter.
  • Steam the cauliflower florets until they are tender but not overly soft, about 5-7 minutes. Drain any excess water and set aside.
  • In a large bowl, combine the heavy cream, half of the shredded cheddar cheese, cream cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until well incorporated.
  • Add the steamed cauliflower to the cheese mixture and gently toss to coat the florets evenly.
  • Transfer the coated cauliflower into the prepared baking dish. Sprinkle the remaining cheddar cheese evenly over the top.
  • Bake in the preheated oven for 15 minutes, or until the cheese is bubbly and beginning to brown.
  • Remove the casserole from the oven and sprinkle the crispy bacon and green onions over the top.
  • Return the casserole to the oven and bake for an additional 5 minutes, or until the bacon and onions are heated through.
  • Serve hot as a fulfilling side dish to any keto-friendly main course.

Notes

For a vegetarian version, omit the bacon or use a vegetarian bacon substitute. Ensure all dairy products are at room temperature to mix easily and create a smooth sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
