Ingredients

Cabbage mix

  • ½ head green cabbage, thinly sliced about 1 lb / 450g
  • ¼ head red cabbage, thinly sliced about 1/2 lb / 225g
  • 2 medium carrots, julienned about 4 oz / 113g

Dressing

  • ½ cup mayonnaise 120ml
  • ¼ cup sour cream 60ml
  • 3 tbsp lime juice 45ml
  • 1 tbsp lime zest from about 2 limes
  • ¼ cup fresh cilantro, chopped 4g
  • 1 tbsp apple cider vinegar 15ml
  • 1 tsp granulated erythritol 4g
  • ½ tsp ground cumin
  • ¼ tsp garlic powder
  • Salt and pepper to taste

Instructions

  • In a large mixing bowl, combine the thinly sliced green and red cabbage with the julienned carrots. Toss to mix well.
  • In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, lime zest, chopped cilantro, apple cider vinegar, erythritol, ground cumin, and garlic powder until smooth and well-combined.
  • Pour the dressing over the cabbage mix and toss thoroughly to ensure all the vegetables are coated evenly with the dressing.
  • Season the coleslaw with salt and pepper to taste. For the best flavor, let it chill in the refrigerator for at least 30 minutes before serving.
  • Before serving, give the coleslaw a final stir to redistribute the dressing and flavors.

Notes

For a dairy-free version, substitute the sour cream with a dairy-free alternative or simply use extra mayonnaise.
To enhance the cilantro flavor, you can add more chopped cilantro to taste.
If you prefer a thinner dressing, add a tablespoon of water or more lime juice to achieve the desired consistency.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
