Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 1 lemon zest Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • 1 tablespoon chopped fresh parsley

Instructions

  • In a mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, salt, black pepper, and red pepper flakes (if using). Stir these ingredients together to create the marinade.
  • Add the peeled and deveined shrimp to the bowl and gently toss them to ensure they are fully coated in the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • While the shrimp are marinating, if using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
  • Preheat your grill to medium-high heat. While the grill is heating, thread the marinated shrimp onto the skewers, piercing each shrimp through the tail and head to secure them.
  • Place the skewers on the grill and cook for 2-3 minutes on each side or until the shrimp turn pink and opaque.
  • Once cooked, carefully remove the shrimp skewers from the grill and garnish with chopped fresh parsley.
  • Serve immediately, with additional lemon wedges on the side if desired.

Notes

For best results, do not overcook the shrimp to avoid a rubbery texture.
If you don't have a grill, these skewers can be cooked under the broiler in your oven. Keep a close eye on them, as they will cook quickly.
This dish pairs well with a side of mixed greens or a keto-friendly vegetable like grilled asparagus or zucchini noodles.
If you're using frozen shrimp, ensure they are fully thawed before marinating.
