Ingredients

  • 4 chicken thighs, bone-in and skin-on approx. 1.5 lbs or 680 grams
  • 2 tbsp olive oil 30 ml
  • 4 cloves garlic, minced about 4 teaspoons or 20 grams
  • 1 lemon, zest and juice zest: 1 tablespoon or 6 grams, juice: 3 tablespoons or 45 ml
  • 1 tsp dried oregano 1 gram
  • ½ tsp paprika 1 gram
  • ½ tsp salt 2.5 grams
  • ¼ tsp ground black pepper 0.5 grams
  • Fresh parsley, chopped for garnish optional, 2 tablespoons or 7.6 grams

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper. Mix well to create the marinade.
  • Pat the chicken thighs dry with paper towels to ensure the skin will crisp up nicely.
  • Place the chicken thighs in a large bowl and pour the marinade over them. Toss to coat evenly, ensuring the marinade is well distributed.
  • Let the chicken marinate for at least 10 minutes to absorb the flavors; for deeper flavor, you can marinate for up to 24 hours in the refrigerator.
  • Transfer the marinated chicken thighs to a baking dish, skin-side up, and arrange them so they are not overcrowded.
  • Bake in the preheated oven for 45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crisp.
  • Once cooked, remove the chicken thighs from the oven and let them rest for a few minutes.
  • If desired, garnish with fresh chopped parsley before serving.

Notes

For the crispiest skin, ensure your chicken thighs are as dry as possible before marinating.
If you have time, marinating overnight will enhance the flavors even more.
This dish can be served with a side of steamed vegetables or a fresh salad to keep it keto-friendly.
