Ingredients

  • 4 fillets salmon 6 ounces each / 170 grams each
  • 2 tbsp olive oil
  • 1 lemon juiced and zested
  • 2 tbsp fresh dill chopped
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine the olive oil, lemon juice and zest, chopped dill, and minced garlic to create a marinade.
  • Place the salmon fillets in a baking dish and season them with salt and pepper.
  • Pour the marinade over the salmon, ensuring each fillet is evenly coated.
  • Let the salmon marinate for 10 minutes at room temperature.
  • Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork.
  • Remove from the oven and let it rest for a few minutes before serving.

Notes

If you prefer a more intense dill flavor, feel free to add extra chopped dill on top of the salmon after baking.
Ensure not to overbake the salmon to keep it moist and tender.
For a complete keto meal, serve with a side of steamed or roasted vegetables like asparagus or zucchini.
