Ingredients

  • 2 cod fillets 6 oz each or 170g each
  • 2 medium zucchini about 1 lb or 450g, spiralized
  • 2 tablespoons olive oil 30ml
  • 1 lemon juice and zest
  • 2 tablespoons fresh dill chopped or 2 teaspoons dried dill
  • Salt and pepper to taste
  • 1 tablespoon unsalted butter 15g
  • Optional garnish: additional fresh dill, lemon slices

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pat the cod fillets dry with paper towels. Season both sides with salt, pepper, and half of the lemon zest.
  • Place the cod fillets on the prepared baking sheet and drizzle each with half a tablespoon of olive oil. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  • While the cod is baking, heat the remaining olive oil in a skillet over medium heat.
  • Add the spiralized zucchini noodles to the skillet, tossing to coat with the oil. Season with salt and pepper, and sauté for 2-3 minutes until just tender. Avoid overcooking to prevent the noodles from becoming mushy.
  • Stir in the lemon juice, remaining lemon zest, and fresh dill. Remove from heat once everything is well combined.
  • Once the cod is done, remove from the oven and top each fillet with a pat of butter, allowing it to melt over the fish.
  • Divide the zucchini noodles between plates, and place a cod fillet on top of each serving.
  • Garnish with additional fresh dill and lemon slices if desired. Serve immediately and enjoy your Keto Lemon Dill Cod with Zucchini Noodles!

Notes

This dish is best served fresh. You can substitute parsley if dill is not available. To ensure even cooking, pat the cod dry before seasoning.
