Ingredients

  • 1 whole leg of lamb approximately 5-6 pounds or 2.2-2.7 kilograms
  • 3 tbsp olive oil 45 ml
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped 30 ml
  • 1 tbsp fresh thyme leaves 15 ml
  • 1 tsp sea salt 5 g
  • ½ tsp black pepper 2 g
  • ½ cup dry red wine optional, for marinating, 120 ml
  • 2 cups beef broth 480 ml

Instructions

  • Preheat your oven to 325°F (160°C).
  • If using, place the leg of lamb in a deep dish and pour the red wine over it, coating it evenly. Let it marinate for 15 minutes on each side.
  • Pat the leg of lamb dry with paper towels and rub it all over with olive oil.
  • In a small bowl, mix together the minced garlic, chopped rosemary, thyme leaves, sea salt, and black pepper to create a herb rub.
  • Massage the herb rub into the leg of lamb, ensuring it's evenly coated.
  • Place the lamb in a roasting pan and pour the beef broth around it.
  • Insert a meat thermometer into the thickest part of the lamb, avoiding the bone.
  • Roast in the preheated oven for about 4 hours, or until the meat thermometer reads 145°F (63°C) for medium-rare.
  • Remove the leg of lamb from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring a moist and flavorful roast.
  • Slice the lamb and serve with your choice of keto-friendly sides.

Notes

If you prefer your lamb to be more or less done, adjust the final internal temperature accordingly (130°F for rare, 160°F for medium, or 170°F for well-done).
The optional red wine marinade can enhance the flavor and tenderness of the lamb, but it can be omitted for a stricter keto approach.
Leftover lamb can be stored in an airtight container in the refrigerator for up to 3 days and makes excellent additions to salads or wraps for a quick keto meal.
For a complete keto meal, consider serving with a side of roasted vegetables like cauliflower or a fresh green salad.
