1wholeleg of lambapproximately 5-6 pounds or 2.2-2.7 kilograms
3tbspolive oil45 ml
4clovesgarlic, minced
2tbspfresh rosemary, chopped30 ml
1tbspfresh thyme leaves15 ml
1tspsea salt5 g

½cupdry red wineoptional, for marinating, 120 ml

Instructions
Preheat your oven to 325°F (160°C).
If using, place the leg of lamb in a deep dish and pour the red wine over it, coating it evenly. Let it marinate for 15 minutes on each side.
Pat the leg of lamb dry with paper towels and rub it all over with olive oil.
In a small bowl, mix together the minced garlic, chopped rosemary, thyme leaves, sea salt, and black pepper to create a herb rub.
Massage the herb rub into the leg of lamb, ensuring it's evenly coated.
Place the lamb in a roasting pan and pour the beef broth around it.
Insert a meat thermometer into the thickest part of the lamb, avoiding the bone.
Roast in the preheated oven for about 4 hours, or until the meat thermometer reads 145°F (63°C) for medium-rare.
Remove the leg of lamb from the oven and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring a moist and flavorful roast.
Slice the lamb and serve with your choice of keto-friendly sides.
