Ingredients

  • 2 pounds lamb shoulder, cut into chunks
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup fresh mint leaves, finely chopped
  • 1 teaspoon cumin powder
  • ½ teaspoon coriander powder
  • Salt and pepper, to taste
  • ½ cup heavy cream
  • Fresh mint leaves for garnish

Instructions

  • Heat the olive oil in a large pot over medium-high heat. Add the lamb chunks and cook until browned on all sides, about 5-7 minutes.
  • Remove the lamb and set aside. In the same pot, add the chopped onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic to the onions and cook for another minute until fragrant.
  • Return the browned lamb to the pot and pour in the beef broth. Bring the mixture to a boil.
  • Once boiling, reduce the heat to a simmer and add the cumin and coriander powder. Season with salt and pepper to taste.
  • Cover the pot and let it simmer for about 45 minutes, or until the lamb is tender.
  • Stir in the chopped mint and heavy cream, and continue to simmer for another 10 minutes.
  • Taste and adjust the seasoning if necessary.
  • Serve hot, garnished with fresh mint leaves.

Notes

For a thicker soup, you can blend some of the soup with an immersion blender before adding the cream and mint.
If lamb shoulder is not available, lamb stew meat can also be used.
To make this dairy-free, coconut cream can be substituted for heavy cream.
Ensure the lamb is well-trimmed to keep the fat content in check, in line with keto guidelines.
The soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
