Ingredients

  • ½ pound Italian sausage 227g
  • 1 cup shredded mozzarella cheese 113g
  • ½ cup almond flour 56g
  • 24 slices pepperoni approx. 2 ounces / 56g
  • ¼ cup grated Parmesan cheese 28g
  • 1 large egg
  • ½ tsp garlic powder 1.5g
  • ½ tsp onion powder 1.5g
  • 1 tsp Italian seasoning 1g
  • ¼ tsp salt 1.5g
  • ¼ tsp black pepper 0.5g
  • ¼ cup low-carb pizza sauce for dipping, 60ml

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a skillet over medium heat, cook the Italian sausage until browned and no longer pink, breaking it into small pieces as it cooks. Drain excess fat and set aside to cool.
  • In a mixing bowl, combine the cooked sausage, mozzarella cheese, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  • Take a tablespoon of the mixture and form it into a ball. Press a slice of pepperoni onto each ball, slightly flattening it.
  • Arrange the pizza bites on the prepared baking sheet, ensuring they are not touching.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the bites are cooked through.
  • Serve hot with a side of low-carb pizza sauce for dipping.

Notes

For a spicier kick, use hot Italian sausage or add a pinch of red pepper flakes to the mixture. These pizza bites can be made ahead and reheated for a quick snack or entertaining guests.
