Ingredients

  • 1 beef heart (approximately 2-3 lbs or 900-1360g), trimmed and cubed
  • 2 tbsp olive oil
  • 1 large onion, diced about 1 cup or 150g
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced about 1 cup or 150g
  • 1 jalapeño, seeded and finely chopped
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper adjust to taste
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • 1 quart beef broth
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped for garnish

Instructions

  • 1. Begin by preparing the beef heart: trim off any tough connective tissue and fat, then cut the heart into bite-sized cubes.
  • 2. Set your Instant Pot to the sauté function and heat the olive oil. Sear the beef heart cubes in batches, ensuring they brown on all sides. Remove the seared meat and set aside.
  • 3. In the same pot, add the onion, garlic, red bell pepper, and jalapeño, sautéing until the vegetables are softened, about 3-5 minutes.
  • 4. Stir in the tomato paste, smoked paprika, cayenne pepper, ground cumin, and dried oregano, cooking for another minute until fragrant.
  • 5. Return the browned beef heart to the pot and pour in the beef broth. Season with salt and pepper to taste.
  • 6. Close the Instant Pot lid, set the valve to sealing, and cook on high pressure for 1 hour and 20 minutes.
  • 7. Once the cooking time is up, allow for a natural pressure release for 10 minutes before doing a quick release for any remaining pressure.
  • 8. Open the lid carefully, adjust seasoning if necessary, and serve hot, garnished with fresh cilantro.

Notes

If you're new to cooking organ meats, beef heart is a great start as it's lean and has a texture similar to steak when cooked properly. This stew can be stored in the fridge for up to 3 days or frozen for longer storage. It's an excellent meal prep option as the flavors deepen when left to sit.
