Ingredients

  • 4 salmon fillets, skin on (6 oz or 170g each)
  • 1 tablespoon olive oil (15 ml)
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • ½ cup chicken broth, preferably low sodium (120 ml)
  • 1 teaspoon sea salt (5g)
  • ½ teaspoon black pepper, freshly ground (2g)
  • 1 tablespoon unsalted butter (15g)
  • 2 tablespoons fresh parsley, chopped for garnish (30g)

Instructions

  • Place the salmon fillets on a clean surface and season both sides with sea salt and black pepper.
  • Set your Instant Pot to the sauté setting and add the olive oil, allowing it to heat up.
  • Add the minced garlic to the pot and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Pour in the chicken broth along with the lemon juice, and stir to combine.
  • Place the salmon fillets into the pot, skin-side down, and spoon some of the liquid over the top of each fillet.
  • Close the lid of the Instant Pot, set the valve to sealing, and cook on high pressure for 3 minutes.
  • Once the cooking time has finished, do a quick release of the pressure according to your Instant Pot’s manufacturer instructions.
  • Carefully open the lid after the pressure has fully released, and remove the salmon fillets with a spatula.
  • Set the Instant Pot back to the sauté setting and add the unsalted butter to the remaining liquid in the pot. Stir until the butter is melted and the sauce has slightly thickened.
  • Plate the salmon and drizzle with the lemon garlic butter sauce from the pot.
  • Garnish the salmon fillets with lemon zest and fresh parsley before serving.

Notes

This dish pairs beautifully with a side of steamed asparagus or a crisp green salad for a complete keto-friendly meal. For those who prefer a milder garlic flavor, reduce the quantity of garlic as desired. Ensure that the salmon is at room temperature before cooking to ensure even cooking throughout.
