Ingredients

Duck Legs with Thighs

  • 4 duck legs with thighs about 2-2.5 lbs or 900-1130 grams
  • 2 tbsp Himalayan salt 30 grams
  • 4 garlic cloves, minced 12 grams
  • 1 tbsp fresh thyme leaves 3.5 grams
  • 1 tsp freshly ground black pepper 2 grams
  • 2 bay leaves
  • 4 cups duck fat, melted 960 grams or approximately 1 liter

Instructions

  • Pat the duck legs dry with paper towels. Mix together the Himalayan salt, minced garlic, thyme leaves, and black pepper in a bowl. Rub the mixture over the duck legs, ensuring they are well coated.
  • Place the seasoned duck legs in a single layer in a dish, cover with plastic wrap, and refrigerate for at least 2 hours, or overnight for deeper flavor.
  • Remove the duck from the refrigerator and place the bay leaves at the bottom of the Instant Pot.
  • Place the duck legs on top of the bay leaves, skin-side up. Pour the melted duck fat over the duck legs, ensuring they are fully submerged.
  • Secure the lid on the Instant Pot, set the valve to "sealing," and cook on the "Manual" or "Pressure Cook" setting on low pressure for 90 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for 15 minutes, then carefully quick release any remaining pressure.
  • Remove the duck legs from the fat carefully, and pat dry with paper towels. Preheat your oven to 400°F (200°C), place the duck legs skin-side up on a baking sheet, and broil for 3-5 minutes or until the skin is golden and crisp.
  • Serve your Keto Instant Pot Duck Confit hot, with your favorite low-carb sides like cauliflower mash or a crisp green salad.

Notes

For best results, cure the duck overnight. Duck fat can be strained and reused; store it in the refrigerator. Duck confit can be stored in the duck fat in a sealed container in the refrigerator for up to a month. For a complete keto meal, serve with low-carb vegetables or over a bed of mixed greens. If you prefer, you can crisp the skin in a skillet over medium-high heat instead of using the oven.
