Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Peel the kohlrabi bulbs and slice them into 1/2-inch (1.25 cm) thick rounds, resembling steaks.
In a small bowl, combine the olive oil with garlic powder, onion powder, dried thyme, rosemary, oregano, and smoked paprika. Stir to create a flavorful marinade.
Brush both sides of each kohlrabi steak with the herbed olive oil mixture. Season generously with salt and pepper.
Arrange the seasoned kohlrabi steaks on the prepared baking sheet in a single layer.
Roast in the preheated oven for 12-15 minutes. Flip each steak and continue to roast for another 10-12 minutes, or until the kohlrabi is tender and the edges are beginning to crisp and brown.
Remove from the oven and let the kohlrabi steaks rest for a couple of minutes.
Garnish with fresh parsley if desired and serve warm as a delicious keto-friendly side dish.
