Ingredients

  • 4 fillets trout 5 ounces each, 140 grams
  • 1 cup hazelnuts 150 grams, finely crushed
  • ¼ cup fresh chives 11 grams, finely chopped
  • 2 tablespoons coconut flour 14 grams
  • 1 teaspoon garlic powder 3.1 grams
  • ½ teaspoon salt 2.5 grams
  • ¼ teaspoon black pepper 0.5 grams
  • 2 large eggs
  • 4 tablespoons olive oil 60 ml

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a shallow dish, combine the crushed hazelnuts, chives, coconut flour, garlic powder, salt, and pepper.
  • In a separate bowl, beat the eggs until well-mixed.
  • Dip each trout fillet first into the beaten eggs, ensuring both sides are coated.
  • Press each egg-dipped fillet into the hazelnut mixture, coating both sides evenly with the crust mixture.
  • Place the crusted fillets on the prepared baking sheet.
  • Drizzle each fillet with a tablespoon of olive oil.
  • Bake in the preheated oven for approximately 12 minutes, or until the crust is golden and the trout flakes easily with a fork.
