Ingredients

For the Gyro Meat

  • 1 lb ground lamb 454g
  • 1 lb ground beef 454g
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped or 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

For the Tzatziki Sauce

  • 1 cup Greek yogurt, full-fat 240ml
  • ½ cup cucumber, deseeded and grated about 150g
  • 2 tablespoons olive oil 30ml
  • 1 tablespoon lemon juice 15ml
  • 1 clove garlic, minced
  • Salt and pepper, to taste

To Serve

  • 8 large lettuce leaves as wraps
  • 1 tomato, sliced
  • ½ red onion, thinly sliced

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine ground lamb, ground beef, minced garlic, oregano, cumin, paprika, sea salt, and black pepper. Mix well until all the spices are evenly distributed.
  • Transfer the meat mixture onto a lined baking sheet and shape it into a flat, rectangular loaf, about 1-inch thick.
  • Place the meat in the preheated oven and bake for 20 minutes, or until the internal temperature reaches 165°F (74°C).
  • While the meat is cooking, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber, olive oil, lemon juice, minced garlic, and season with salt and pepper to taste. Stir until well combined and refrigerate until ready to serve.
  • Once the meat is cooked, remove it from the oven and let it rest for a few minutes before slicing thinly.
  • Assemble the gyros by placing a few slices of the gyro meat onto a lettuce leaf, add tomato and red onion slices, and top with a generous dollop of tzatziki sauce.
  • Roll up the lettuce leaves to enclose the filling and serve immediately.

Notes

If you prefer a crispier gyro meat, you can broil it for 2-3 minutes after baking.
For an even lower carb count, opt for a dairy-free yogurt alternative in the tzatziki sauce.
To store leftovers, keep the gyro meat and tzatziki sauce in separate airtight containers in the refrigerator for up to 3 days.
