  • 1 lb ground chicken 454 grams
  • 1 tablespoon olive oil 15 ml
  • 1 teaspoon chili powder 4 grams
  • ½ teaspoon ground cumin 1 gram
  • ½ teaspoon paprika 1 gram
  • ¼ teaspoon garlic powder 0.5 grams
  • ¼ teaspoon onion powder 0.5 grams
  • Salt and pepper to taste
  • 8 cups mixed salad greens 200 grams
  • 1 cup cherry tomatoes, halved 150 grams
  • ½ cup shredded cheddar cheese 60 grams
  • ¼ cup black olives, sliced 30 grams
  • 1 medium avocado, diced 150 grams
  • 2 green onions, thinly sliced 15 grams

Avocado Lime Dressing

  • 1 ripe avocado 150 grams
  • ¼ cup lime juice 60 ml
  • ¼ cup olive oil 60 ml
  • 1 clove garlic, minced
  • 1 tablespoon cilantro, chopped 4 grams
  • Salt and pepper to taste

Instructions

  • Start by preparing the ground chicken. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the ground chicken, breaking it apart with a spatula.
  • Season the chicken with chili powder, ground cumin, paprika, garlic powder, onion powder, salt, and pepper. Cook for about 8-10 minutes or until the chicken is fully cooked and no longer pink. Stir occasionally to ensure even cooking. Remove from heat and set aside to cool slightly.
  • While the chicken is cooking, prepare the avocado lime dressing. In a blender or food processor, combine the ripe avocado, lime juice, olive oil, minced garlic, and chopped cilantro. Blend until smooth. Season with salt and pepper to taste and set aside.
  • Assemble the salad by placing the mixed greens in a large serving bowl. Top with cooked ground chicken, cherry tomatoes, shredded cheddar cheese, black olives, diced avocado, and green onions.
  • Drizzle the avocado lime dressing over the salad just before serving. Toss everything together to coat the ingredients evenly with the dressing.
