It’s packed with seasoned ground chicken, sautéed cauliflower rice, and a medley of fresh toppings for a wholesome meal that's both nutritious and incredibly tasty.
Start by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground chicken, breaking it apart with a spatula. Cook until the chicken is browned and no longer pink, about 5-7 minutes.
Season the chicken with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir well to combine the spices with the chicken. Cook for an additional 3 minutes, then remove from heat and set aside.
In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the riced cauliflower, paprika, salt, and pepper. Sauté the cauliflower rice for about 8-10 minutes, or until it's tender and slightly golden. Stir occasionally to prevent sticking and to ensure even cooking.
While the cauliflower rice is cooking, prepare the toppings by halving the cherry tomatoes, dicing the avocado, and shredding the cheese.
To assemble the burrito bowls, divide the cauliflower rice among four bowls. Top with the seasoned ground chicken.
Add the cherry tomatoes, diced avocado, shredded cheddar cheese, and a dollop of sour cream to each bowl.
Garnish with chopped fresh cilantro and serve with lime wedges on the side.
