Ingredients

Ground Chicken

  • 1 pound ground chicken
  • 1 tablespoon olive oil

  • ¼ teaspoon onion powder
  • Salt and pepper to taste

Cauliflower Rice

  • 1 medium head cauliflower, riced about 4 cups
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • Salt and pepper to taste

Toppings

  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream
  • Fresh cilantro chopped
  • Lime wedges for serving

Instructions

  • Start by heating 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground chicken, breaking it apart with a spatula. Cook until the chicken is browned and no longer pink, about 5-7 minutes.
  • Season the chicken with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir well to combine the spices with the chicken. Cook for an additional 3 minutes, then remove from heat and set aside.
  • In another skillet, heat 1 tablespoon of olive oil over medium heat. Add the riced cauliflower, paprika, salt, and pepper. Sauté the cauliflower rice for about 8-10 minutes, or until it's tender and slightly golden. Stir occasionally to prevent sticking and to ensure even cooking.
  • While the cauliflower rice is cooking, prepare the toppings by halving the cherry tomatoes, dicing the avocado, and shredding the cheese.
  • To assemble the burrito bowls, divide the cauliflower rice among four bowls. Top with the seasoned ground chicken.
  • Add the cherry tomatoes, diced avocado, shredded cheddar cheese, and a dollop of sour cream to each bowl.
  • Garnish with chopped fresh cilantro and serve with lime wedges on the side.

Notes

Feel free to customize your toppings as desired. Jalapeños, green onions, or a drizzle of keto-friendly salsa are all great additions.
