Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped about 1/2 cup
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 1 cup beef broth
  • 4 ounces cream cheese, softened
  • ½ cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  • Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and no longer pink. Drain excess fat and set the beef aside.
  • In the same skillet, melt the butter. Add the chopped onions and garlic, sautéing until the onions are translucent.
  • Add the sliced mushrooms to the skillet and cook until they are soft and browned.
  • Return the ground beef to the skillet with the onions and mushrooms. Stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
  • Reduce the heat to low and mix in the cream cheese until fully melted and integrated into the sauce.
  • Stir in the sour cream until the sauce is smooth and creamy. Season with salt and pepper to taste. Allow the stroganoff to heat through without boiling.
  • Serve hot, garnished with fresh parsley.

Notes

For a thicker sauce, you may add a teaspoon of xanthan gum during step 5.
To reduce the carb content, you can omit the onions or use less.
This dish can be served over zucchini noodles or cauliflower rice for a complete keto meal.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
