2tablespoonsolive oil
1mediumonion, dicedabout 150 grams
3clovesgarlic, minced
1teaspoonsalt
½teaspoonblack pepper
1teaspoonsmoked paprika
½teaspooncumin
10ouncesfresh spinach
½cupbeef broth
1cupshredded cheddar cheese
¼cupheavy cream
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes.
Incorporate the minced garlic into the skillet and sauté for another minute until fragrant.
Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt, black pepper, smoked paprika, and cumin. Cook until the beef is browned and no longer pink, approximately 6-8 minutes.
Once the beef is cooked, stir in the fresh spinach, wilting it down in batches if necessary. Continue to cook until the spinach has reduced in size and is evenly distributed throughout the beef mixture.
Pour in the beef broth and bring the mixture to a simmer. Allow the skillet to simmer for 5 minutes to let the flavors meld together.
Lower the heat and mix in the shredded cheddar cheese and heavy cream, stirring continuously until the cheese has melted and the sauce has thickened slightly.
Taste and adjust seasoning if necessary, then remove the skillet from heat.
