Ingredients

  • 1 lb ground beef
  • 1 medium head cauliflower, riced about 4 cups / 600g
  • 1 medium onion, diced about 1 cup / 150g
  • 2 cloves garlic, minced
  • 1 bell pepper, diced about 1 cup / 150g
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ cup shredded cheddar cheese
  • 2 tbsp fresh parsley, chopped for garnish

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.
  • Add the minced garlic and ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spatula as it cooks.
  • Season the beef mixture with sea salt, black pepper, smoked paprika, and cumin. Stir well to combine the spices evenly.
  • Mix in the riced cauliflower to the skillet, and continue to cook for another 10 minutes, stirring occasionally until the cauliflower is tender and the flavors are well combined.
  • Once cooked, remove the skillet from the heat, and sprinkle the shredded cheddar cheese over the top of the hash. Cover the skillet with a lid or aluminum foil for a few minutes to allow the cheese to melt.
  • Garnish with fresh parsley before serving.

Notes

Feel free to customize this hash by adding other keto-friendly vegetables like spinach or mushrooms. For those who enjoy a bit of heat, a diced jalapeño or a sprinkle of red pepper flakes can add a spicy kick. To keep it keto, ensure any additional ingredients are low in carbohydrates.
