2medium eggplants (about 2 pounds or 900 grams), sliced into 1/2-inch rounds
2tbspolive oil(30 ml)
Salt and pepper, to taste
Mint yogurt sauce
1cupfull-fat Greek yogurt(245 grams)
1tbspfresh mint, finely chopped(15 ml)
1clovegarlic, minced
1tbsplemon juice(15 ml)
Instructions
Preheat your grill to medium-high heat or prepare a grill pan on the stove.
Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they have nice grill marks and are tender.
While the eggplant is grilling, prepare the mint yogurt sauce. In a small bowl, combine the Greek yogurt, chopped mint, minced garlic, and lemon juice. Stir until well combined. Season with salt and pepper to taste.
