Ingredients

  • 2 cups spinach
  • 1 large cucumber approximately 8oz / 225g
  • ½ lemon, juiced 1oz / 30ml
  • 1 inch fresh ginger, peeled 10g
  • 1 cup cold water
  • Ice cubes optional
  • Fresh mint leaves for garnish optional

Instructions

  • Begin by thoroughly washing the spinach leaves and cucumber. Pat them dry with a clean towel.
  • Peel the cucumber and chop it into chunks small enough to fit through the feed chute of your juicer.
  • Peel the ginger using the edge of a spoon or a vegetable peeler, then slice it into smaller pieces.
  • Cut the lemon in half and squeeze the juice, making sure to remove any seeds.
  • Turn on your juicer and begin by juicing the spinach leaves, followed by the cucumber chunks and ginger pieces.
  • Once all the vegetables have been juiced, stir in the freshly squeezed lemon juice.
  • If you prefer a colder beverage, add a few ice cubes to the juicer or blend the juice with ice in a blender for a slushie-like consistency.
  • Pour the juice into glasses, garnish with mint leaves if desired, and serve immediately for the best flavor and nutrient retention.

Notes

For a sweeter taste, you may add a keto-friendly sweetener like stevia or erythritol. Remember to adjust net carbs accordingly.
