Ingredients

  • 1 medium head cauliflower (about 1 lb or 450 g)
  • 1 cup shredded mozzarella cheese
  • ½ cup almond flour
  • 1 large egg
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • 2 tbsp unsalted butter melted
  • Fresh parsley chopped (for garnish)

Instructions

  • Begin by preheating your oven to 400°F (200°C). Remove the leaves and stem from the cauliflower and cut it into florets. Steam the florets until tender, about 8-10 minutes. Once cooked, transfer them to a clean kitchen towel and allow them to cool slightly.
  • Once the cauliflower is cool enough to handle, wrap it in the towel and squeeze out as much moisture as possible. This step is crucial for achieving a crispy texture. After squeezing, use a food processor to pulse the cauliflower florets until they resemble rice.
  • In a large mixing bowl, combine the riced cauliflower, shredded mozzarella cheese, almond flour, egg, minced garlic, oregano, basil, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  • Line a baking sheet with parchment paper. Transfer the dough to the sheet and use your hands to form it into a rectangle, about 1/2 inch thick. You can use a spatula to smooth the top for an even finish.
  • Place the baking sheet in the preheated oven and bake for 20 minutes, or until the edges are golden brown.
  • After 20 minutes, remove the breadsticks from the oven. Brush the melted butter over the top and sprinkle with grated Parmesan cheese. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes. Using a sharp knife, cut the breadsticks into strips. Garnish with chopped fresh parsley before serving.

Notes

These breadsticks can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for a few minutes to restore their crispness. Feel free to experiment with different herbs and spices for additional flavor!
