  • ¼ cup unsweetened cocoa powder 22 g
  • ¼ cup powdered erythritol 48 g

  • tsp green food coloring optional for color, 0.5 ml
  • Pinch of sea salt

Instructions

  • In a small saucepan, gently melt the coconut oil over low heat until it becomes liquid.
  • Remove the saucepan from the heat and whisk in the unsweetened cocoa powder until well combined with no lumps.
  • Stir in the powdered erythritol, ensuring it dissolves completely into the mixture.
  • Add the peppermint extract and a pinch of sea salt, mixing thoroughly to distribute the flavors evenly.
  • If desired, add a small amount of green food coloring and stir until you achieve a uniform minty hue.
  • Pour the mixture into silicone mint molds or drop small spoonfuls onto a parchment-lined baking sheet to form individual mints.
  • Place the mints in the freezer to set for about 1 hour, or until they are firm to the touch.
  • Once set, gently remove the mints from the molds or parchment paper and store them in an airtight container in the refrigerator.
