Ingredients

Chicken

  • 4 boneless, skinless chicken thighs about 1.5 lbs or 680 grams
  • 1 tsp sea salt 5 grams
  • ½ tsp black pepper 1 gram
  • ½ tsp garlic powder 1.5 grams
  • ½ tsp paprika 1 gram

Breading

  • 1 cup almond flour 96 grams
  • ¼ cup grated Parmesan cheese 30 grams
  • 1 tsp baking powder 4 grams
  • 1 tsp sea salt 5 grams
  • ½ tsp onion powder 1.5 grams
  • ½ tsp dried oregano 1 gram

Egg Wash

  • 2 large eggs 100 grams
  • 2 tbsp heavy cream 30 ml

Instructions

  • Begin by patting the chicken thighs dry with paper towels. Season both sides with sea salt, black pepper, garlic powder, and paprika. Set aside.
  • In a shallow dish, combine the dry breading ingredients: almond flour, grated Parmesan cheese, baking powder, sea salt, onion powder, and dried oregano. Mix well.
  • In a separate bowl, whisk together the eggs and heavy cream to create the egg wash.
  • Dip each seasoned chicken thigh into the egg wash, ensuring it's well coated. Then dredge the chicken in the almond flour mixture, pressing it into the breading to coat thoroughly.
  • Heat a large skillet over medium heat and add enough oil to cover the bottom of the pan (approximately 1/2 inch or 1.25 cm deep). Once the oil is hot, carefully place the breaded chicken thighs in the skillet.
  • Fry the chicken for 8-10 minutes on each side, or until the exterior is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  • Transfer the fried chicken to a wire rack set over a baking sheet to drain any excess oil.

Notes

For an even crispier texture, you can add a tablespoon of coconut flour to the breading mixture. Ensure the oil is hot enough before adding the chicken to prevent the breading from soaking up too much oil and becoming soggy.
