Ingredients

  • 6 slices bacon 170g/6 oz
  • 1 medium head of green cabbage about 900g/2 lbs, cored and sliced
  • 1 medium onion 110g/4 oz, thinly sliced
  • 3 cloves garlic minced, 9g/0.3 oz
  • ½ tsp paprika 1g
  • Salt and pepper to taste
  • 2 tbsp apple cider vinegar 30ml
  • 1 tbsp unsalted butter 14g/0.5 oz

Instructions

  • In a large skillet or frying pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside on a paper towel to drain. Once cooled, chop into bite-sized pieces.
  • In the bacon grease remaining in the pan, sauté the onion and garlic until the onion turns translucent and the garlic is fragrant, about 3-4 minutes.
  • Add the sliced cabbage to the pan, stirring to coat with the bacon grease, onion, and garlic. Cook for about 10 minutes, or until the cabbage is tender and begins to brown slightly.
  • Sprinkle the paprika over the cabbage, and season with salt and pepper to taste. Stir to distribute the spices evenly.
  • Pour the apple cider vinegar into the pan and stir to deglaze the pan, picking up any browned bits from the bottom. This will add a tangy depth to the dish.
  • Add the butter and allow it to melt into the cabbage, giving the dish a rich, velvety texture.
  • Finally, add the chopped bacon back into the pan, mix well to combine, and cook for an additional 2-3 minutes to ensure everything is heated through.
  • Serve hot as a delicious keto-friendly side dish.

Notes

To make this dish dairy-free, you can omit the butter or replace it with a dairy-free alternative.
For a vegetarian version, omit the bacon and use coconut oil or olive oil to sauté the cabbage.
Adjust the seasoning to your liking, and feel free to add a pinch of red pepper flakes for a bit of heat if desired.
