Ingredients

  • 2 tbsp olive oil
  • 3 tbsp coconut flour
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • ½ tsp garlic powder
  • ¼ tsp dried oregano
  • ¼ tsp salt
  • tsp ground black pepper
  • 2 cups chicken broth
  • 1 can tomato sauce (no sugar added) 15 ounces
  • 1 tsp apple cider vinegar

Instructions

  • Prepare the Base: In a medium saucepan, heat the olive oil over medium heat. Add the coconut flour and whisk continuously for about 1 minute until it is completely blended with the oil and begins to form a paste.
  • Add the Spices: Stir in the cumin, chili powder, garlic powder, dried oregano, salt, and black pepper. Continue to cook for another 2 minutes, whisking constantly to prevent burning and allowing the spices to become fragrant.
  • Combine with Liquids: Gradually pour in the chicken broth while constantly whisking to ensure a smooth mixture. Add the tomato sauce and apple cider vinegar, and stir well to combine.
  • Simmer to Perfection: Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally. The sauce should thicken as it cooks.
  • Adjust and Serve: Taste and adjust the seasoning if necessary. Once the sauce is thickened to your liking, remove it from the heat and it's ready to be served with your favorite keto-friendly Mexican dishes.

Notes

For a smoother sauce, blend the finished product with an immersion blender or in a regular blender until desired consistency is reached.
If a thinner sauce is preferred, simply add more chicken broth until the desired consistency is achieved.
Store any leftovers in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
