Ingredients

For the Eggplant Fries

  • 1 large eggplant (about 1 lb / 450 g)
  • 1 cup almond flour
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray (for baking)

For the Garlic Aioli

  • ½ cup mayonnaise
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Dijon mustard (optional)

Instructions

  • Preheat your oven to 425°F (220°C).
  • Slice the eggplant into fries, about 1/4 inch thick. Lay them on a paper towel and sprinkle with salt. Let them sit for about 15 minutes to draw out moisture and bitterness. Pat them dry with another paper towel.
  • In a shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well.
  • In another bowl, beat the eggs until well combined.
  • Dip each eggplant fry into the egg mixture, allowing excess to drip off, then coat it in the almond flour mixture. Press gently to ensure the coating sticks. Place the breaded fries on a baking sheet lined with parchment paper.
  • Spray the coated fries lightly with olive oil spray. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
  • While the fries are baking, prepare the garlic aioli. In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, pepper, and Dijon mustard if using. Mix well until smooth. Adjust seasoning to taste.
  • Once the fries are done, remove them from the oven and let them cool for a few minutes. Serve hot with the garlic aioli on the side for dipping.

Notes

Feel free to experiment with different seasonings in the almond flour mixture to customize the flavor of your fries. These eggplant fries can also be air-fried for an even crispier texture—just adjust the cooking time accordingly.
