Ingredients

  • 1 medium onion, diced about 150g
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced about 119g
  • ½ tsp red pepper flakes adjust to taste
  • 1 tsp smoked paprika
  • ¼ cup dry white wine optional
  • 1 can diced tomatoes, no sugar added 14.5 oz or 411g
  • 2 cups seafood stock or broth
  • 1 pound shrimp, peeled and deveined 454g
  • 12 ounces scallops 340g
  • 1 pound firm white fish (e.g., cod), cut into chunks 454g
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Add the minced garlic, diced red bell pepper, red pepper flakes, and smoked paprika. Cook for an additional 2 minutes, stirring frequently, to release the flavors.
  • Pour in the dry white wine, if using, and allow it to simmer and reduce by half, about 3 minutes.
  • Stir in the diced tomatoes and seafood stock. Bring the mixture to a low boil, then reduce the heat and let it simmer for 20 minutes to meld the flavors.
  • Add the shrimp, scallops, and white fish to the stew. Season with salt and pepper. Simmer for an additional 10 minutes, or until the seafood is cooked through and opaque.
  • Check for seasoning and adjust if necessary. Serve hot, garnished with fresh parsley.

Feel free to customize the type of seafood based on availability and preference. If you prefer not to use wine, you can substitute it with an extra 1/4 cup of seafood stock.
