Ingredients

  • 2 cups cooked chicken, shredded (about 16 oz or 450g)
  • 8 oz cream cheese, softened (about 227g)
  • ½ cup buffalo wing sauce (about 120ml)
  • ½ cup ranch dressing (about 120ml)
  • 1 cup shredded cheddar cheese (about 4 oz or 113g)
  • ½ cup shredded mozzarella cheese (about 2 oz or 56g)
  • ¼ cup green onions, chopped (about 1 oz or 28g)
  • ¼ cup crumbled blue cheese (optional) (about 1 oz or 28g)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a Dutch oven, combine the shredded chicken and softened cream cheese, stirring until well mixed.
  • Add the buffalo wing sauce and ranch dressing to the chicken mixture. Stir until all ingredients are fully incorporated.
  • Mix in half of the shredded cheddar and mozzarella cheeses until evenly distributed throughout the chicken mixture.
  • Smooth the mixture with a spatula, and then top with the remaining cheddar and mozzarella cheeses.
  • If using, sprinkle the crumbled blue cheese over the top for an extra layer of flavor.
  • Cover the Dutch oven with its lid or aluminum foil and bake in the preheated oven for 20 minutes.
  • Remove the lid or foil, and continue to bake for an additional 5 minutes or until the cheese is bubbly and slightly golden.
  • Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped green onions.
  • Serve warm with keto-friendly dippers like celery sticks, cucumber slices, or homemade keto crackers.

Notes

If you prefer a spicier dip, feel free to add extra buffalo sauce to taste. For a milder version, you can reduce the amount of buffalo sauce or add more ranch dressing.
