Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup chopped kale
  • 1 medium zucchini, diced
  • ½ cup chopped celery
  • ½ cup sliced mushrooms
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground ginger
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro

Instructions

  • Heat the coconut oil in a large pot over medium heat.
  • Add the diced onion and minced garlic to the pot. Sauté for 3-4 minutes until the onions are translucent.
  • Pour in the chicken broth and bring the mixture to a low boil.
  • Add the chopped kale, diced zucchini, chopped celery, and sliced mushrooms to the pot. Stir well.
  • Season the soup with ground turmeric, ground ginger, salt, and pepper. Allow the soup to simmer for 15 minutes.
  • Stir in the apple cider vinegar, chopped parsley, and cilantro, and continue to simmer for another 5 minutes.
  • Taste and adjust the seasoning if necessary.

Notes

Feel free to add additional keto-friendly vegetables such as spinach or cauliflower for extra nutrients. For a non-vegetarian option, consider adding shredded chicken or diced cooked bacon for added protein. Remember to adjust the seasoning to your taste, and be mindful of the carb content of any additional ingredients to maintain ketosis.
