Ingredients

  • 2 cups cooked chicken, diced (about 340g/12 ounces)
  • ¼ cup red onion, finely chopped (about 40g/1.4 ounces)
  • ½ cup celery, diced (about 64g/2.25 ounces)
  • ¼ cup almonds, slivered (about 23g/0.8 ounces)
  • ½ cup mayonnaise (about 120ml/4 fluid ounces)
  • 1 tbsp curry powder (about 6g/0.2 ounces)
  • 1 tsp Dijon mustard (about 5ml/0.17 fluid ounces)
  • 1 tbsp fresh cilantro, chopped (about 4g/0.14 ounces)
  • Salt and pepper to taste

Instructions

  • In a large mixing bowl, combine the diced cooked chicken, red onion, and celery.
  • In a separate small bowl, whisk together the mayonnaise, curry powder, and Dijon mustard until well blended.
  • Pour the curried mayonnaise dressing over the chicken mixture and mix until the chicken is evenly coated.
  • Gently fold in the slivered almonds and fresh cilantro, adding a pinch of salt and pepper to taste.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
  • Serve chilled on a bed of lettuce or with keto-friendly crackers.

Notes

For a nut-free version, substitute the almonds with pumpkin seeds.
To cook the chicken, you can poach, grill, or bake it. Leftover rotisserie chicken also works great in this recipe.
Adjust the amount of curry powder based on your personal spice preference.
If you're preparing this salad in advance, add the almonds right before serving to maintain their crunch.
