Ingredients

  • 1 pound fresh asparagus woody ends trimmed and chopped
  • 2 tablespoons unsalted butter
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • ¼ teaspoon xanthan gum
  • Salt and pepper to taste
  • Optional garnishes: sour cream, chopped chives, grated parmesan cheese

Instructions

  • Melt the butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and chopped asparagus, cooking for an additional 2 minutes until the asparagus is bright green and the garlic is fragrant.
  • Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 10-12 minutes, or until the asparagus is tender.
  • Using an immersion blender, carefully blend the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a blender in batches and blend until smooth.
  • Return the soup to the pot (if using a standard blender) and stir in the heavy cream. Heat through.
  • Sprinkle the xanthan gum over the soup and whisk vigorously to combine. This will thicken the soup without adding carbs. Allow the soup to simmer for a few more minutes to reach the desired consistency.
  • Season the soup with salt and pepper to taste. Serve hot, garnished with your choice of sour cream, chives, or parmesan if desired.

Notes

For a vegetarian version, substitute chicken broth with vegetable broth.
The xanthan gum is optional but recommended for a thicker soup consistency. If you prefer a thinner soup, you can omit it.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave before serving.
