Ingredients

  • 1 cup raw pecans 109g
  • ½ cup unsweetened shredded coconut 40g
  • ¼ cup almond flour 24g
  • ¼ cup flaxseed meal 30g
  • ½ cup dried cranberries, sugar-free 60g
  • ¼ cup pumpkin seeds 30g
  • ¼ cup sunflower seeds 35g
  • ½ cup unsalted butter, melted 114g
  • cup sugar-free syrup 80ml
  • 1 tsp vanilla extract 5ml
  • ½ tsp cinnamon
  • ¼ tsp salt

Instructions

  • Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving some overhang for easy removal.
  • In a large mixing bowl, combine the pecans, shredded coconut, almond flour, flaxseed meal, dried cranberries, pumpkin seeds, and sunflower seeds. Mix well to distribute evenly.
  • In a separate bowl, whisk together the melted butter, sugar-free syrup, vanilla extract, cinnamon, and salt until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until everything is thoroughly coated and starts to stick together.
  • Transfer the mixture to the prepared baking pan. Use a spatula to press down firmly and evenly, ensuring the mixture is compacted.
  • Bake in the preheated oven for 20 minutes, or until the edges are golden brown and the center is set.
  • Remove from the oven and let cool completely in the pan. Once cool, use the overhanging parchment paper to lift the granola slab out and transfer it to a cutting board.
  • Cut into 12 bars. Store in an airtight container at room temperature for up to 1 week, or refrigerate for longer shelf life.

Notes

For a touch of sweetness, you may add a few drops of liquid stevia to the wet ingredients. To ensure the bars are completely keto-friendly, make sure to use sugar-free dried cranberries and syrup. If you prefer a crunchier texture, bake the bars for an additional 5 minutes.
