Ingredients

For the Waffles

  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ cup unsweetened almond milk
  • 2 large eggs
  • ¼ cup shredded cheddar cheese
  • 2 tbsp melted butter

For the Chili

  • 1 lb ground beef or turkey
  • 1 can diced tomatoes (15 oz or 425g)
  • 1 can kidney beans (15 oz or 425g, drained and rinsed)
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups beef broth (480ml)

Instructions

  • In a large pot over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon.
  • Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion becomes translucent.
  • Stir in the chili powder, cumin, paprika, salt, and pepper. Cook for another minute to toast the spices.
  • Add the diced tomatoes, kidney beans, and beef broth. Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally. Adjust seasoning as needed.
  • Preheat your waffle iron according to the manufacturer's instructions.
  • In a large mixing bowl, combine the almond flour, coconut flour, baking powder, salt, and garlic powder. Whisk until well blended.
  • In a separate bowl, whisk together the almond milk, eggs, and melted butter.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded cheddar cheese.
  • Lightly grease the waffle iron with cooking spray or a little butter. Pour the batter onto the hot waffle iron, using about 1/2 cup of batter per waffle (adjust according to your waffle iron size).
  • Close the lid and cook until the waffles are golden brown and crispy, about 5-7 minutes.
  • Serve the cornbread waffles warm, topped with a generous ladle of chili. Optionally, add toppings like sour cream, diced green onions, or extra cheese.
