Ingredients

  • 6 pieces hot dogs (about 12 oz / 340 g)
  • 1 cup almond flour (96 g)
  • ½ cup coconut flour (60 g)
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup unsweetened almond milk (120 ml)
  • 1 tbsp apple cider vinegar
  • oil for frying (coconut, avocado, or vegetable oil)

Instructions

  • Pat the hot dogs dry with a paper towel to ensure the batter sticks. Insert wooden skewers into each hot dog, about halfway through, leaving enough stick for easy handling.
  • In a large mixing bowl, combine the almond flour, coconut flour, baking powder, garlic powder, onion powder, paprika, and salt. Mix well until evenly combined.
  • In a separate bowl, whisk together the eggs, almond milk, and apple cider vinegar until well blended.
  • Pour the wet mixture into the dry ingredients. Stir until a thick batter forms. If the batter is too thick, add a splash more almond milk to reach a smooth, pourable consistency.
  • In a deep skillet or pot, heat about 2 inches of oil over medium heat. Use a kitchen thermometer to ensure the oil reaches 350°F (175°C).
  • Dip each hot dog into the batter, ensuring it's fully coated. Allow any excess batter to drip off before carefully placing it in the hot oil.
  • Fry the corn dogs in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side or until they are golden brown. Use a slotted spoon to turn them as needed.
  • Once golden, remove the corn dogs from the oil and place them on a plate lined with paper towels to absorb excess oil. Serve warm with your favorite low-carb dipping sauce.

Notes

For a spicy kick, consider adding a pinch of cayenne pepper to the batter. These corn dogs can also be served with sugar-free ketchup or mustard for dipping. Enjoy this delightful keto-friendly treat at your next gathering!
