Ingredients

  • 4 fillets cod about 6 oz each / 170g each
  • ½ tsp salt 2.5g
  • ¼ tsp black pepper 1.25g
  • ¼ cup almond flour 28g
  • 2 tbsp olive oil 30ml
  • 4 tbsp unsalted butter 56g
  • ¼ cup fresh lemon juice 60ml
  • ½ cup chicken broth 120ml
  • ¼ cup capers drained, 30g
  • 2 tbsp fresh parsley chopped, 8g
  • Lemon slices for garnish

Instructions

  • Season the cod fillets evenly with salt and pepper.
  • Spread the almond flour on a plate and lightly dredge each cod fillet, shaking off excess flour.
  • Heat olive oil over medium-high heat in a large skillet.
  • Once hot, add the cod fillets and cook for 3-4 minutes on each side until golden brown and cooked through. Remove the cod from the skillet and set aside.
  • In the same skillet, reduce the heat to medium and add butter, scraping up any browned bits from the bottom of the pan.
  • Stir in the lemon juice and chicken broth, bringing the mixture to a simmer. Allow the sauce to reduce slightly, about 3 minutes.
  • Add capers to the sauce and stir to combine.
  • Return the cod fillets to the skillet, spooning the sauce over the fish. Cook for an additional 2 minutes to allow the flavors to meld.
  • Garnish with chopped parsley and lemon slices before serving.

Notes

For an even more robust flavor, consider adding a splash of white wine to the sauce when adding the lemon juice and broth. If almond flour isn't on hand, coconut flour can be used as a substitute for dredging the fish. Ensure the skillet is well-heated before adding the fillets to prevent sticking and achieve a perfectly golden crust.
