Ingredients

  • 12 large jalapeños (about 1 lb / 450 g)
  • 1 cup cooked ground beef or turkey (8 oz / 225 g)
  • 1 cup shredded cheddar cheese (4 oz / 115 g)
  • ½ cup cream cheese (4 oz / 115 g), softened
  • ½ cup diced tomatoes with green chilies (drained, 120 ml)
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • ¼ cup chopped fresh cilantro (optional for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  • Carefully slice each jalapeño in half lengthwise and remove the seeds and membranes (use gloves if desired to protect your hands from the heat).
  • In a large mixing bowl, combine the cooked ground meat, shredded cheddar cheese, cream cheese, diced tomatoes with green chilies, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
  • Using a spoon, generously fill each jalapeño half with the chili and cheese mixture. Pack the filling tightly to ensure they hold together during cooking.
  • Place the stuffed jalapeños on the prepared baking sheet, cut side up. Bake in the preheated oven for about 20 minutes, or until the jalapeños are tender and the cheese is bubbly and golden.
