Ingredients

For the Chicken

  • 1 lb chicken breasts, boneless and skinless
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste

For the Lettuce Wraps

  • 8 large leaves iceberg lettuce or romaine lettuce

For the Toppings

  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream
  • 1 medium avocado, diced 150g
  • 1 small tomato, diced 90g
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  • Begin by preparing the chicken. Cut the chicken breasts into small, bite-sized pieces. Season them with the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Ensure the pieces are well coated with the seasoning.
  • Heat the avocado oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken pieces to the skillet. Cook for 7-10 minutes, stirring occasionally, until the chicken is thoroughly cooked and has a slightly golden exterior.
  • While the chicken is cooking, prepare the lettuce wraps. Carefully separate the lettuce leaves, rinse, and pat them dry. Choose the most bowl-shaped leaves for the tacos to hold the fillings.
  • Dice the avocado and tomato, and chop the cilantro for the toppings. Set aside.
  • Once the chicken is cooked, remove the skillet from the heat. Allow it to cool slightly.
  • Assemble the tacos by placing an even amount of cooked chicken into each lettuce wrap. Sprinkle with shredded cheddar cheese, and add a dollop of sour cream on top.
  • Add the diced avocado, tomatoes, and a sprinkle of fresh cilantro to each taco.
  • Serve with lime wedges on the side for squeezing over the tacos.

Notes

Ensure the lettuce leaves are completely dry to prevent the tacos from becoming soggy. For an extra kick, add a pinch of cayenne pepper to the chicken seasoning.
