Ingredients

  • 1.5 pounds chicken breast, cooked and shredded
  • 8 slices bacon, cooked and chopped
  • 1 cup heavy cream
  • ½ cup ranch dressing, keto-friendly
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried dill
  • ¼ teaspoon paprika
  • 2 cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the heavy cream, ranch dressing, garlic powder, onion powder, dried dill, paprika, salt, and pepper. Stir until well mixed.
  • Add the cooked, shredded chicken and chopped bacon to the bowl with the ranch mixture. Mix until the chicken and bacon are fully coated.
  • Fold in 1 cup of shredded cheddar cheese until evenly distributed.
  • Transfer the mixture into a greased 9x13-inch (23x33 cm) baking dish. Spread it out evenly.
  • Sprinkle the remaining cheddar cheese and the grated Parmesan cheese over the top of the casserole.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for 5 minutes. Garnish with chopped fresh parsley before serving.

Notes

Ensure the ranch dressing used is low in carbs and keto-friendly.
For a crispier topping, broil the casserole for the final 2-3 minutes.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
To reheat, simply bake in the oven at 350°F (175°C) until warmed through.
