Ingredients

  • 1.5 lbs Chicken thighs (boneless, skinless)
  • 8 oz Cremini mushrooms sliced
  • 1 small Onion finely chopped
  • 2 Garlic cloves minced
  • 1 cup Sour cream
  • 4 oz Cream cheese softened
  • 1 cup Chicken broth
  • 1 tbsp Dijon mustard
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish, chopped

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Season the chicken thighs with salt, pepper, and paprika, then add them to the skillet. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken and set aside.
  • In the same skillet, add the chopped onions and sauté until they become translucent, about 3 minutes. Add the garlic and continue to cook for another minute until fragrant.
  • Stir in the sliced mushrooms and cook for 5-7 minutes, or until the mushrooms have released their moisture and started to brown.
  • Reduce the heat to low. Add the softened cream cheese and stir until it is completely melted and blended with the mushrooms and onions.
  • Pour in the chicken broth and Dijon mustard, mixing well. Allow the sauce to simmer for about 5 minutes, or until it starts to thicken.
  • Cut the cooked chicken into strips or bite-sized pieces and return it to the skillet. Stir well to combine with the mushroom sauce.
  • Remove the skillet from the heat and stir in the sour cream until the stroganoff sauce is smooth and creamy.
  • Garnish with chopped fresh parsley before serving.

Notes

This dish can be served over cauliflower rice or zucchini noodles for a complete keto-friendly meal. For a thicker sauce, allow the stroganoff to simmer for an additional 5-10 minutes, or until it reaches your desired consistency.
