Ingredients

  • 4 boneless pork chops 1 inch thick, about 6 oz or 170g each
  • 1 tsp sea salt 5g
  • ½ tsp black pepper 1g
  • 1 tbsp olive oil 15ml
  • ½ cup balsamic vinegar 120ml
  • ½ cup unsweetened cherry juice 120ml
  • 1 tbsp erythritol 12g
  • ¼ tsp xanthan gum 1g
  • ½ cup fresh cherries pitted and halved, about 75g
  • 1 tbsp unsalted butter 14g
  • 2 cloves garlic minced, about 6g
  • 1 sprig fresh thyme

Instructions

  • Season the pork chops on both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook until browned and the internal temperature reaches 145°F (63°C), about 5-7 minutes per side. Remove pork chops from the skillet and set aside to rest.
  • In the same skillet, add balsamic vinegar, cherry juice, and erythritol, stirring to combine. Bring to a simmer and cook until the mixture is reduced by half, about 10 minutes.
  • Whisk in the xanthan gum until the sauce begins to thicken, then add the cherries, butter, garlic, and thyme. Cook for an additional 3-4 minutes, or until the cherries are soft and the sauce has a syrupy consistency.
  • Return the pork chops to the skillet, spooning the cherry balsamic sauce over them, and cook for another 2-3 minutes to reheat the pork chops and coat them in the sauce.
  • Serve the pork chops with a generous drizzle of the cherry balsamic reduction.

Notes

If you don't have fresh cherries, unsweetened frozen cherries can be used as a substitute. Thaw and drain before using. Adjust the amount of erythritol to your preference for sweetness. The nutritional information is estimated and may vary based on the specific ingredients used.
