Ingredients

  • 1 lb Broccoli florets (16 oz/453g)
  • 4 oz Cream cheese (113g)
  • 1 cup Shredded cheddar cheese (4 oz/113g)
  • ½ cup Sour cream (4 oz/115g)
  • ½ cup Almonds, sliced (2 oz/57g)
  • 1 tsp Garlic powder (3.1g)
  • ½ tsp Onion powder (1.5g)
  • ½ tsp Salt (2.5g)
  • ¼ tsp Black pepper (0.5g)
  • 2 tbsp Butter, melted (1 oz/28g)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with a bit of butter or non-stick cooking spray.
  • Steam the broccoli florets until they are just tender, about 3-4 minutes. Avoid overcooking as they will continue to cook in the oven.
  • In a large mixing bowl, combine the softened cream cheese, sour cream, half of the shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Mix until you have a smooth and creamy cheese sauce.
  • Add the steamed broccoli to the cheese sauce and toss well to ensure each floret is coated.
  • Transfer the broccoli and cheese mixture into the prepared baking dish, spreading it out evenly.
  • Sprinkle the sliced almonds over the top of the broccoli mixture, then cover with the remaining cheddar cheese.
  • Drizzle the melted butter evenly over the top of the cheese.
  • Bake in the preheated oven for 25 minutes, or until the cheese is bubbly and golden brown.
  • If desired, garnish with fresh chopped parsley before serving.
  • Let the bake rest for a few minutes before serving to allow the sauce to thicken slightly.

Notes

For a nut-free version, you can omit the almonds or replace them with a keto-friendly seed like sunflower seeds. If you prefer a crunchier broccoli texture, reduce the steaming time slightly. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving for the best texture.
