Ingredients

  • 1 pound ground beef 453g
  • 1 tablespoon olive oil 15ml
  • ½ medium onion, diced about 1/2 cup or 75g
  • 2 cloves garlic, minced
  • 1 bell pepper, diced bell pepper about 1 cup or 150g
  • 1 tablespoon homemade taco seasoning or store-bought 15g
  • 1 can diced tomatoes, drained 14.5 ounces or 411g
  • 1 cup shredded cheddar cheese 4 ounces or 113g
  • ½ cup shredded mozzarella cheese 2 ounces or 56g
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add the diced onions and cook until translucent, about 2-3 minutes.
  • Add the minced garlic and diced bell pepper to the skillet. Sauté for another 2 minutes until the peppers soften slightly.
  • Crumble the ground beef into the skillet. Cook until browned, breaking it apart with a spatula, approximately 5-7 minutes. Season with salt and pepper to taste.
  • Sprinkle the taco seasoning over the cooked beef and mix well to combine.
  • Stir in the drained diced tomatoes and let the mixture simmer for about 5 minutes to blend the flavors.
  • Lower the heat and sprinkle both the cheddar and mozzarella cheeses evenly over the beef mixture. Cover the skillet with a lid and let it sit until the cheese is melted, about 2-3 minutes.
  • Garnish with fresh cilantro if desired, and serve immediately for a cheesy, keto-friendly delight.

Notes

To increase fiber, add more bell peppers or other low-carb vegetables like zucchini or spinach.
For a spicier kick, include diced jalapeños or a pinch of cayenne pepper.
