- 1 cup Almond Flour
- ¼ cup Granulated sweetener
- ½ teaspoon salt
- ¼ cup melted butter
- 400 grams cream cheese
- 1 tsp vanilla extract
- 1 lemon juice
- ½ cup powdered sweetener meant for baking
- 40 ml heavy cream
- 2 eggs
Combine almond flour, granulated sweetener, salt and butter in a bowl.
Press the crust mix into the base of a lined baking pan, pressing down firmly. Refrigerate for minimum 30 minutes
Make the cheesecake filling - combine cream cheese, vanilla extract, lemon juice, sweetener in a bowl and mix well.
Beat the eggs in a separate bowl and gradually add to the filling mix, ovoid over mixing here.
Pour cheesecake filling into baking tray with crust, and spread evenly.
Bake for 40-45 minutes at 280f (140C) then cool for at least 2 hours
