Ingredients

  • 1 cup Almond Flour
  • ¼ cup Granulated sweetener
  • ½ teaspoon salt
  • ¼ cup melted butter
  • 400 grams cream cheese
  • 1 tsp vanilla extract
  • 1 lemon juice
  • ½ cup powdered sweetener meant for baking
  • 40 ml heavy cream
  • 2 eggs

Instructions

  • Combine almond flour, granulated sweetener, salt and butter in a bowl.
  • Press the crust mix into the base of a lined baking pan, pressing down firmly. Refrigerate for minimum 30 minutes
  • Make the cheesecake filling - combine cream cheese, vanilla extract, lemon juice, sweetener in a bowl and mix well.
  • Beat the eggs in a separate bowl and gradually add to the filling mix, ovoid over mixing here.
  • Pour cheesecake filling into baking tray with crust, and spread evenly.
  • Bake for 40-45 minutes at 280f (140C) then cool for at least 2 hours
